The critical element of fine Indian cooking is the blending and use of a wide variety of aromatic spices and herbs: ginger, garlic, onion, chili peppers, turmeric, cardamom, black pepper, cloves, cumin, fenugreek, fennel, mustard seed, saffron, asafetida, bay leaf, cilantro leaf, and mint leaf, among others. Curry is the aromatic sauce produced by blending of spices and herbs in hot oil. Curry dishes are now cooked with spices and herbs, either with or without the sauce. A typical traditional meal is represented by a Thali , a large stainless steel plate with small bowel dishes containing rice, naan, or puri, or roti or paratha (flat breads), dhal (lentil), vegetables or meat (non-vegetarian), chutney or pickle and yogurt- see our Menu page.
